Ingredients

  • 35g red pepper
  • 35g yellow pepper
  • 2 handfuls spinach
  • 30g dry quinoa
  • 1 medium egg
  • Approx 5 cherry tomatos
  • 2 dairy-lea light triangles
  • salt and pepper

Method

  1. Pour quinoa into pan, cover with water, bring to the boil and then simmer for 20-30 minutes until cooked.
  2. Meal while chip up the peppers and tomatoes and fry in a pan using 1 cal fry spray, along with the spinach.
  3. Once quinoa is nearly finished add the dairylea so it melts in with the quinoa, then add the peppers and spinach. Leave on very low heat whilst frying your egg. Fry egg in pan again with 1 cal spray, if needed finish off under the grill.
  4. Spoon the quinoa mix into a bowl and top with the fried egg, salt and pepper to taste before serving!
