Ingredients

  • 1 teaspoon coconut oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, chopped
  • 2 courgettes, diced
  • 1 tin of chopped tomatoes
  • 3 tbsp tomato puree
  • 1 tbsp tumeric
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 small chilli, chopped and deseeded
  • pinch of salt
  • pinch of pepper
  • 200g Halloumi light, thickly sliced
  • pinch of fresh herbs

 

Method

  1. In a large woke, saute garlic and onion in coconut oil for a few minutes
  2. Add tomatoes, courgettes, puree and spices and simmer with a lid for 20 minutes
  3. Put into a glass baking dish and cover with halloumi slices, then grill until the slices are golden brown
  4. Sprinkle with basil and enjoy
